Description
With big shoes to fill, we brough this one in to replace the Costa Rica for a few months this summer. This sun-dried coffee is smooth and vibrant, with sweetness and lasting depth. It carries notes of milk chocolate, lemon, and brown sugar, and offers average acidity and sweetness, making the bright citrusy-lemon notes stand out. This coffee has a bit more body than a traditional medium roast, but a notably smooth finish.

This lot is sourced from the southern state of Chiapas, Mexico, where the mountain ranges provide an ideal altitude and climate for specialty coffee production. The vast majority of farms in the area small, family-owned plots under 10 acres in size. Coffee is dried in the sun on patios and in mechanical dryers known as guardiolas when needed.
